Hearty Chicken & Corn Chowder
This hearty American classic makes for the perfect winter warmer.
- 2 tbsp butter
- 1 finely chopped, medium onion
- 3 tbsp plain flour
- 710ml V8® Original Vegetable Juice
- 125ml milk
- 1/4 tsp ground black pepper
- Approx. 450g cooked chicken, cubed
- 1 can (300g) drained sweetcorn
- Heat the butter in a small saucepan over medium heat. Introduce the onion and cook until tender, stirring occasionally. Add the flour, stir in thoroughly and cook for 1 min.
- Gradually add the V8 juice, milk and pepper, stirring constantly on a medium-high heat until the mixture thickens.
- Add the cooked chicken and sweetcorn and simmer for a further 10 minutes.
