If you grow your own tomatoes, you’ll probably be drowning in them by now. This time of year, you’re probably wondering what to do with excess tomatoes. So, it’s the perfect time to get creative with them. But if you’re short for inspiration, we’re here to give you V8 things to make with your tomatoes.
1. Homemade Tomato Ketchup
Every household will have a bottle of tomato ketchup in their fridge (or cupboard) and what better way to save yourself some money by creating your own? It’s simple to make, tastes better and is usually a lot healthier than your regular supermarket bottle. All you need is two ripe tomatoes and a few other bits and you’re ready to go! Time to get cooking.
2. Homemade Tomato Soup
As we approach the end of summer, we come into soup season… A.k.a Autumn! And with all your leftover tomatoes, you can make gallons of soup that can be stored and used all throughout the colder months.
Ideal for a light dinner or a scrummy lunch, stuffed tomatoes are a yummy yet nutritious meal that can be customised in anyway to suit your taste. You can try risotto stuffed-tomatoes, lamb mince stuffed-tomatoes, cheese and breadcrumb stuffed-tomatoes or even create your own. They’re quick and easy to prepare, and super scrummy.
4. Tomato bruschetta
Tomato bruschetta is a classic Italian starter and the perfect way to use up a lot of your tomatoes at once. On average when making your bruschetta you’ll be using around 6-8 medium tomatoes, so this is a good way to use up a lot at once. This dish is also a fresh and tasty meal that’s perfect for summer. But if you’re hoping when you defrost your tomatoes, they’re going to be fresh they probably won’t be… But if you want to pop a few away for cooking in the winter, you can just put them straight in. Tomatoes can be frozen for up to six months as long as they’re in an airtight container.
